Zucchini Noodles with Mushrooms, Black Beans & Sweet Potatoes
Yesterday, I was feeling like cooking something new, but something that wouldn't require too much of a cleanup, and would leave a few leftovers for lunch. I had been reading about zucchini noodles, so I thought I'd give them a shot...

Ingredients:
- 1 zucchini, julienned (I used a peeler, so my zucchini strips were a bit too wide...)
- 1 medium sweet potato, cut into small chunks
- 4 white mushrooms, sliced
- 1 cup canned black beans
- 1-2 Tbsp butter
- 1 Tbsp olive oil
- 1/4 tsp coriander powder
- 1/4 tsp garlic powder
- salt
- paprika powder
- black pepper
- chilli flakes
Method:
- Preheat oven to 375°F. Put sweet potato chunks in a lined baking tray, sprinkle with a bit of oil, salt, black pepper and paprika. Bake for 30-35 minutes.
- In a pan over medium heat, add butter, oil, coriander powder, garlic powder, paprika, pepper, salt and chilli flakes.
- Once the spices are nicely mixed, add the zucchini and mushrooms and stir, for about 3-4 minutes
- Add the black beans and the baked sweet potatoes, mix well. Turn stove to low, cook for another 3-5 minutes.
- Enjoy!
